About Nabil Ayoubb

Olive and Citrus is Owned by Nabil Ayoub and his mother, Leila. They are also former owners of Caprice Cafe on State Street in Redlands. In 2014, Nabil and his partner Paul Emerson of Emerson & Farrar Jewelry purchased Heritage Hall.  It was a Redlands landmark that was built in 1922 by Seventh-Day Adventists and transformed it into an elegant fine-dining restaurant.  The Restaurant is dubbed “probably the prettiest restaurant in the city.” by Redlands Daily Facts.  With 337 reviews, the restaurant is rated 4 stars on Yelp and boasts a Mediterranean inspired cuisine and fantastic cocktails using fresh ingredients and exquisite style



About Our Guest Today

Nabil went to Rensselaer Polytechnic Institute in Troy, upstate New York, to study architecture. Soon after he graduated he took over his family's restaurant, Caprice Cafe in Redlands, CA.  

Nabil had no experience with hospitality but aspired to have the restaurant achieve its best within its many limitations. Nabil learned as he went along, mainly by researching other restaurants he admired.  Eventually, the limitations of Caprice could no longer support his desire to go further, and hence he ventured to open his own restaurant Olive & Citrus. 

Nabil was able to use his studies in design to manipulate spaces and turn the landmark building into a beautiful structure for dining and entertaining.  His studies also benefited him with any endeavor that required composition and balance. Nabil attributes his mother's cooking and work ethic to helping him build the more essential foundations and making sure his skills were not all for show.
